Edit: I don't know why I'm getting downvoted. I do not endorse eating "gluten friendly" menu items if you're celiac. The OP asked what it meant, I gave my interpretation of what it means. When I see "gluten friendly" on a menu or the server tells me it's not gluten free but instead is "gluten friendly", I nope right out of there. Hard pass.
