Open the pause menu during the game with +. From the pause menu, you can change controller and screen settings, and access the online manual. Resume the game from where you left off.

In MGS1 you press L1+R1 to pause the game (including cutscenes) and access a menu with some settings that allows you to return to the MGS1 menu and also the main application menu.
