This is Parlo in his backyard in the Caribbean where outdoor cooking is a staple in the villages. It is a tradition that is still practiced today but mainly for special events. The spoon that he is using is a hand made bamboo spoon. The bamboo is cut and dried for about two to three weeks before the event. Caribbean cuisine is very diverse.
