INGREDIENTS: (for a large bowl) - 6 cucumbers - 4 large tomatoes - 2 red onions - A bunch of fresh mint - Juice from 1 lemon - Olive oil - salt and pepper (to taste) INSTRUCTIONS: Chop the cucumbers, tomatoes and onions into very small cubes and add into a bowl along with chopped mint.
